SPEED AND HALF SHELL OYSTER SHUCKING
The center-piece of the West Coast Oyster Shucking Championships and Washington State Seafood Festival (AKA OysterFest) is the Oyster Shucking contests. On Saturday the shuckers go for Speed and Sunday is the Half Shell (presentation) shucking. There are 7 heats each day and the final heat determines who will win the PACIFIC RIM OYSTER OPEN SPEED SHUCKING and/or PACIFIC RIM OYSTER OPEN HALF SHELL shucking titles.

Each day the shucking commences at 11am and continues every hour on the hour with the final heat being the championship match-up. The shucking tables in the viewing arena are arranged in a slight U-shape facing the grand stands. These stands are 30 to 50 feet away and also in a U-shape configuration. The shuckers competing in the finals are there because they had the best times and best judged oysters. And they are fast!

The Winner and 2nd and 3rd places receive cash prizes and a Gold, Silver or Bronze medal. A gold medal is also awarded to the contestant with the Best Presentation. Cash prizes and medals are also awarded in Saturday’s Speed Shucking event. The names of the Gold Medal Winners of the Half Shell, Speed and Presentation competitions are automatically placed in the OysterFest Shucking Hall of Fame.

OYSTERFEST COOK-OFF

The OysterFest Seafood Cook Off brings together adventurous chefs and would-be chefs from the West Coast to compete in a Cook Off competition extending over two days. For the last three years the competition has been open to both amateurs and professionals. It is of note that since inception amateurs have won 50 % of the medals and have twice captured the grand prize.

The Event comprises two competitions:

FIRSTLY, applicants can choose to cook one of three Seafood categories: an appetizer, soup (or stew) or a main dish.  The dishes are judged on several criteria (including     presentation, color, taste, appropriate temperature, and sanitary cooking conditions) by a distinguished panel of judges who are either educators at Culinary Arts Schools or Professional Chefs. All were chosen for their exceptional credentials. The scores of the  judges are averaged for each contestant. (Should a contestant be a student of a judge, the score of that judge is not included. Instead, the average of the other judges is used.) At the end of the competition, the scores for each contestant in each category are compared and MEDALS are awarded for the THREE highest scores in each category.

SECONDLY, ALL the scores of ALL THREE categories are considered together and CASH AWARDS and MEDALS (Gold, Silver Bronze) are awarded to the three best entrants. The value of these cash awards is $600, $400 and $300 respectively.

The title of OysterFest Seafood Chef of the year is bestowed upon the GRAND OVERALL WINNER.

We invite you to attend and to compete.

It is FUN, CHALLENGING, AND YOU STAND TO WIN BIG PRIZE MONEY.

AN EXCITING NEW INNOVATION was started last year with the initiation of an IRON CHEF COMPETITION.

On SATURDAY October 6th at 4.15PM we are proud to host our second Iron Chef competition. The secret ingredients will be unveiled to the two professional chefs by the chief judge. Each competitor will be expected to present a menu using these ingredients to the judges, prepare their delicacies and present them to the judging panel.

Last year's winner, Rudi Guerero of the Rainier Club, will defend his championship against a competitor chosen by the Oysterfest Cook-off Administration. .

This is a ROTARY CLUB FUND RAISING EVENT and we look forward to your SUPPORT.

VOLUNTEER INFORMATION

WANT TO HELP?

Do you ever wonder who does all the work to make OysterFest happen? The answer is—YOU! No matter who you are in Shelton, Mason County and beyond, we’d love your help in making OysterFest happen.

Some 250 people set up, tear down, clean and staff many of the basic functions at OysterFest, from painting lines for recreational vehicles to hanging signage, from timing the oyster shuckers to selling the souvenirs.

We provide free entry and chits for non-alcoholic beverages to any OysterFest volunteer.

The best part of it all is that it’s fun! Mason County is still a rural community, where people know their neighbors and smile when strangers walk by on the street. Imagine what it’s like to work side-by-side with old friends – or soon-to-be-new friends, to help host a great big party. That’s the formula that makes OysterFest a friendly, comfortable festival second to none on the West Coast – or in the world.

Thanks to folks like you, we keep making a better OysterFest every year. Join us to make it the best ever!
